Brandy-Glazed Carrots
INGREDIENTS:
2 lbs baby carrots
½ cup butter
¼ cup honey
¼ cup brandy
salt and pepper to taste
fresh parsley, chopped for garnish
INSTRUCTIONS:
1. In a large skillet, bring ½ inch of water to a boil. Add carrots, cover and cook until carrots are crisp-tender. Drain and set aside.
2. In the same skillet, cook butter and honey over medium heat until butter is melted. Stir in the brandy and bring to a boil. Cook until the liquid is reduced to about ½ cup.
3. Add the carrots, parsley and season with salt and pepper. Heath through and serve.
