Cowboy Steak

INGREDIENTS:

2 Bone-in Rib Eye Steak
4 tablespoon kosher salt
2 tablespoon black pepper
3 tablespoons unsalted butter
1 tablespoons canola oil
4 tablespoon finely sliced shallots

INSTRUCTIONS:

1. Preparation: Let steak sit at room temperature for 30 minutes to ensure even cooking.
2. Season steak with salt and pepper (steak will nearly be white from salt).
3. Heat a large heavy-bottom skillet over medium-high heat until butter sizzles. Add shallots and cook until translucent. Remove from pan and set aside.
4. Add in steaks. Cook until steaks turn deep brown 5-7 minutes for medium rare. Rotate steaks and cook until other side turns deep brown, about another 5-7minutes.
5. Remove from heat and layer with cooked shallots and buttery pan juices.

Couscous Crusted Chicken Tenders with Corn & Tomato Salad

INGREDIENTS:

6-8 Boneless Chicken Tenders (About 8 Oz. Total)
1/4 C. Plain Couscous
1/4 C. Boiling Water
1/4 C. Sargento® Off the Block 4 Cheese Mexican
2 Tbsp. Salsa
12 Grape Tomatoes, Halved or Quartered
1/2 C. Corn, Frozen & Thawed or Cooked & Cooled
1 Lime, Juiced
1 Green Onion, Chopped
Salt & Pepper to Taste
Optional Toppings: Avocado, Guacamole, Hot Sauce, Chives, Etc.

INSTRUCTIONS:

1. Preheat oven to 425 degrees F. Line an oven tray with foil or parchment paper and place a heat safe baking rack over the top for a more even cook. (If using a rack, lightly coat it with non-stick cooking spray.)
2. Place the couscous in a medium bowl and pour the boiling water over the couscous. Cover and set aside for 5 minutes.
3. Once done, use a fork to fluff the couscous. Set aside to cool slightly.
4. Add the cheese to the couscous and toss to combine. Season with salt and pepper to taste.
5. Press the chicken tenders into the couscous mixture to coat. Place the tenders onto the prepared baking sheet.
6. Bake, turning occasionally, for about 30 minutes or until the edges are turning golden brown and the chicken is cooked through.
7. Meanwhile, combine the tomatoes, corn, lime juice, and green onions in a medium bowl and season with salt and pepper.
8. When done, remove the chicken from the oven.
9. Place 3-4 tenders on each plate; divide the tomato salad evenly among dishes.
10. Top the chicken with salsa (or serve on the side for dipping) and serve immediately.

Buttermilk Roasted Chicken

INGREDIENTS:

Chicken Breast Halves, Bone In - 6
Buttermilk, Well Shaken - 3 Cups
Vegetable Oil - 3/4 Cup-Divided
Garlic Cloves, Crushed - 4
Salt - 1 1/2 Tablespoons
Black Pepper - 1 Teaspoon
Fresh Rosemary, Chopped - 2 Tablespoons
Honey - 2 Tablespoons
Fresh Parsley, Chopped (Optional) - 3 Tablespoons

INSTRUCTIONS:

1. In a bowl, mix together buttermilk, 1/2 cup vegetable oil, garlic, salt, pepper, rosemary and honey until salt is dissolved.
2. Divide the chicken pieces into 2- 1 gallon ziplock bags. Pour half of the buttermilk mixture in each bag. Press out as much air as possible and seal bags. Place on a rimmed dish or plate in case bag leaks. Refrigerate overnight or preferably for 2 days. Flip bag halfway through marinating time.
3. Heat oven to 400 degrees. Take the chicken out of the ziplock bags and place on a wire rack so any extra marinade will drip off. Line a baking pan with aluminum foil and place the chicken in a single layer on the pan. Drizzle chicken with remaining oil. Roast chicken at 400 degrees for 45 minutes, then turn off the oven, and allow chicken to continue to cook (just in the remaining heat-don't open the door) for 7-10 minutes more or until chicken is done.
4. Allow chicken to rest for about 7-10 minutes then serve.

INGREDIENTS:

8 – 9 pieces Chicken thighs
1/2 cup Kikkoman Soy sauce
1 (13 1/2-ounce) can Coconut milk
3/4 cup Cider vinegar
1 tsp. Garlic powder
2 tsp. Onion powder
2 teaspoons Black pepper
1/2 – 1 tsp. Salt, to your taste
1 tsp. Accent seasoning
4 Bay leaves
1/2 cup Green onions, sliced thin

INSTRUCTIONS:

1. Wash the chicken pieces well and start trimming off the fat and excess skin.
2. Place the chicken pieces in a bowl and add the soy sauce. Mix to combine and coat the chicken well. cover and allow the chicken to sit for about 30 minutes to an hour.
3. Using a large non-stick fry pan, remove the chicken pieces from the bowl of soy sauce and allow the soy sauce to drain off well. DO NOT discard this soy sauce! Place the chicken into the fry pan, in a single layer, skin side down.
4. On MEDIUM HIGH heat, place the fry pan and start to cook the chicken. This is a different technique, cold chicken in a cold pot; but doing it this way will allow the fat to render off the chicken skin. Allow the chicken pieces to cook, skin side down, until the chicken skin has turned to a golden color and the fat has melted from the chicken. No need to turn the chicken at this point, since we’re just rendering the fat. REMOVE the chicken pieces from the pan and set aside. Look at all that extra fat that you don’t need. DISCARD this fat from the pan but do not wash the pan. We want to keep all that yummy flavor at the bottom of it. Return the chicken pieces back to the pan. Set this aside.
5. In the bowl, with the soy sauce, that the chicken was marinating in, add ALL of the remaining ingredients, except for the green onions. Stir this together to combine well. Pour this over the chicken in the fry pan.
6. Return the fry pan to the stove top and on MEDIUM HIGH heat, bring this mixture to a boil. Now reduce heat to medium, but DO NOT COVER! Allow the thighs to cook skin side down for about 20 minutes, stirring often.
7. After the 20 minutes, turn the pieces of chicken to the other side. Taste for flavor and adjust accordingly. Reduce the heat to MEDIUM LOW and cook for about 10 minutes longer, allowing the mixture to reduce and thicken slightly. Make sure to stir often.
8. Once the desired flavor is reached, sprinkle with the green onions. Remove from heat and serve with steamed white rice and your favorite sides.

Burong Mangga


INGREDIENTS:

6 pieces of green mangoes (hilaw na mangga) with very firm flesh
half cup of white rock salt
2 cups of water

INSTRUCTIONS:

1. Wash the mangoes thoroughly in running tap water.
2. Peel and cut each mango into three flat pieces -- the middle piece would be the large, flat seed. 
3. Shave the flesh off the side of the seed (if you do this skillfully, you'll end up with two long, fat slivers off each mango's seed).
4. Slice up the remaining flesh into long, fat slivers. 
5. Arrange the fat slivers upright in a large jar.
6. Meanwhile, prepare the brine solution by boiling the water and the salt for five minutes. Let cool.
7. Pour the brine mixture into the jar. 
8. Cover the jar loosely and let it ferment.
9. After three days, tighten the cap and place the jar in the refrigerator.

1 tsp canola oil
1 English muffin, split and toasted
1 slice of American cheese
1/2 cup of chopped and cooked corned beef, seared
1 egg, cooked over easy or sunny side up

INSTRUCTIONS:

1. Start by heating a sauté pan on medium heat. Add the canola oil, and let it come to temperature.
2. Add in the chopped corned beef, and cook until you get some nice crispy edges. Remove to a small bowl, and set to the side.
3. Next, crack the egg, and cook until your desired doneness. During this time, toast your English muffin.
4. Once toasted, lay down the American cheese on the bottom muffin, top with the cooked egg, and carefully place the crisped corned beef on top. Top with the top muffin, and get ready to go.

Buffalo Popcorn Chicken

INGREDIENTS:

2 large boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons hot sauce of choice, use more or less depending on heat preference
½ cup flour mixed with 2 teaspoons cornstarch
2 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons salt
½ teaspoon sugar
¾ teaspoon garlic powder
½ teaspoon onion powder
½ cup buttermilk
½ cup water
4 tablespoons hot sauce of choice, use more or less depending on heat preference
2 teaspoons white vinegar
Blue cheese dressing
Celery sticks

INSTRUCTIONS:

1. Place the chicken pieces and 2 tablespoons hot sauce in a bowl and stir to thoroughly combine. Set aside.
2. Place the ½ cup flour/cornstarch mixture in a shallow bowl and set aside.
3. Combine the 2 cups of flour, baking powder, salt, sugar, garlic powder and onion powder in a large mixing bowl and whisk in the buttermilk and water until no lumps remain. Add the 4 tablespoons of hot sauce and stir to combine.
4. Pour some oil into a small skillet to at least ½ inch depth. Using a candy thermometer, heat the oil to 365ºF.
5. Dredge the chicken pieces into the ½ cup of flour/cornstarch, shake off the excess, then dip the pieces into the wet batter. Immediately place the chicken pieces carefully into the hot oil and fry on all sides until golden brown and cooked through, about 2 minutes on each side. Work in batches and be careful not to overcrowd the pan. Use a slotted spoon to transfer the chicken pieces to a plate lined with paper towels to drain for 1 minute.
6. Serve immediately with blue cheese dressing and celery sticks.

Citrus Shrimp with Jasmine Rice

INGREDIENTS:

1 lb shrimp, shells removed
1 cup jasmine rice, cooked according to package directions
½ cup fresh squeezed lemon juice
¾ cup fresh squeezed orange juice
¼ cup fresh squeezed lime juice
1 tablespoon lemon zest
1 jalapeño, chopped
1 cup frozen peas
½ cup cilantro, chopped

INSTRUCTIONS:

1. Cook rice according to package directions.
2. Zest one of your lemons until you have one tablespoon of zest.
3. Squeeze lemons, oranges, and limes. You can use two of each. Combine juice.
4. Chop jalapeño.
5. Add chopped jalapeño and zest to juice.
6. Add shrimp and let marinate while rice is cooking.
7. When rice is a few minutes away from being done, add the shrimp and marinade to a saucepan and bring to a boil. Cook shrimp for 2-3 minutes.
8. With one minute left on shrimp, add cup of frozen peas.
9. Remove from heat.
10. Add chopped cilantro.
11. Spoon over jasmine rice.

Buñuelos

INGREDIENTS:

1 cup water
3 tbsps. butter
1 c. plain flour, sifted
5  medium eggs
oil for deep frying
caster sugar 

INSTRUCTIONS:

1. Place the water and butter in a saucepan and bring to a boil. When the butter is melted, add the flour all at once and stir until the mixture forms ball and leaves the side of the pan.
2. Remove from heat, transfer to a mixing bowl and leave to cool for 5 minutes.
3. Using an electric mixer, beat for 10 seconds before adding the eggs, one at a time, beating well after each addition. The mixture will seem curdly at the start but will be smooth after all the eggs are added in.
4. Heat the oil in a pan. When hot, add spoonfuls of the mixture (use a small ice cream scoop) and fry until well puffed and golden. The balls will turn by itself and split as it fries but you can nudge it with a slotted spoon to fry it evenly.
5. It is done when it is light (in weight) and golden in colour and have stopped expanding. Remove from the oil and transfer to a kitchen paper lined tray.
6. Toss in caster sugar. Needless to say, best eaten warm.

INGREDIENTS:

½ cup of button mushroom, sliced
25 grms cheddar cheese
50 grms cooked ham, cut into cubes
15 grms cherry tomatoes, sliced
2 tbsp of milk
2 tsp of unsalted butter
3 large eggs
Salt and pepper to taste

INSTRUCTIONS:

1. In a mixing bowl, beat the eggs with a whisk or a fork.
2. Pour some milk and season to taste. Set mix aside.
3. In your fry pan, heat and melt the butter. Pour in the beaten eggs.
4. Add the mushroom, tomatoes, ham and cheese into the center of the egg. Cook until the cheese has melted.
5. Fold the omelette in half and serve! Serve with other breakfast staples like pan de sal, sinangag or even on its own.

Buchi (Sesame Balls)

INGREDIENTS:

3 cups glutinous rice flour
85 grams caster sugar
250ml water
1 cup purple yam jam (or any preferred filling)
1 cup sesame seeds
250ml vegetable oil or more for frying

INSTRUCTIONS:

1. Using a large bowl, combine the flour, sugar and water and mix with your hands thoroughly to make a dough.
2. Place the sesame seeds in a separate small bowl. Set aside. 
3. Divide the dough into 20 round balls or more if you intend to make smaller treats.
4. Using a rolling pin, flatten one ball then scoop a teaspoon of your filling into the disc.
5. Put the edges together and shape it back into round balls with your hands.
6. Roll the stuffed balls into the sesame seeds.
7. Repeat for all the dough. 
8. Prepare a deep skillet and heat with about a cup of vegetable oil.
9. Once the oil is hot, slowly drop the buchi balls into the hot oil and cook until golden. 
10. Scoop out with a spider (in picture) or a slotted spoon.
11. Drain on paper towels.

Chorizo Chili

INGREDIENTS:

6 pork chorizo links
1 white onion
1 tsp coconut oil
2 cups of water
half a head of cauliflower
(optional) chives to garnish

INSTRUCTIONS:

1. Remove skin from chorizo links and saute meat until cooked through. Transfer to a bowl and set aside.
2. Chop and saute onions in same pan as chorizo, so they can soak up flavor. When softened and browned, transfer to bowl with cooked chorizo.
3. Add two cups of water to a pot with half a chopped cauliflower, and steam for 15 minutes or until cauliflower is soft.
4. Puree cauliflower and water in a blender until smooth.
5. Then mix all ingredients - cooked chorizo, onions, and pureed cauliflower in a pot on stove and heat. Then serve.

Brown Rice Crispy Treat Easter Eggs

INGREDIENTS:

1 cup brown rice syrup
¼ cup all-natural creamy peanut butter
1 tablespoon coconut oil
½ teaspoon vanilla extract
4 cups crispy brown rice cereal
all-natural cooking spray
½ cup enjoy life dark chocolate chips
naturally dyed sprinkles

INSTRUCTIONS:

1. Line a baking sheet with parchment paper and set aside.
2. In a medium sauce pan over very low heat, melt together brown rice syrup, peanut butter, coconut oil and vanilla extract until creamy and pourable.
3. In a large bowl add brown rice cereal and pour in brown rice and peanut butter mixture. Stir until well combined.
4. Spray a small plastic easter egg with all-natural cooking spray. Scoop mixture into easter egg and close firmly, molding rice crispy treats into an egg shape. Place on parchment paper and store in a cool area to harden. Let set for at least an hour.
5. Once eggs are hardened, melt chocolate in a double boiler. Dip rice crispy eggs into chocolate and return to parchment paper. Add sprinkles and let chocolate set.

Dark Chocolate Chips - 1.5 cup
Sugar - 2 tblspn
Water - 4 tblspn
Instant Coffee Powder - 1/2 tsp
Whipping Cream - 1 cup

INSTRUCTIONS:

1. Take water, sugar and coffee powder in a sauce pan, heat till the sugar is melted and the water comes to a boil.
2. Add in chocolate chips and heat it on a very low flame till the chocolate is completely melted.
3. Now pour this mix into a bowl and cool it completely.
4. Take cream in a bowl and use a electric beater to whip this till it gets thick and forms soft peaks.
5. Now fold this cream into the chocolate very gently.
6. Once everything is mixed up well.
7. Spoon this into serving glasses and chill in the fridge for 2 hours.
8. Serve cold.

Brined Pork Spareribs

INGREDIENTS:

3 lbs. pork spare ribs

Brine:

½ cup of salt
1 tsp. mustard seeds
1 tsp. cinnamon
1 tsp. cayenne
1 tsp. paprika
3 bay leaves
3 cloves garlic – crushed

INSTRUCTIONS:

1. In a large bowl that has a cover or a pot that has a cover, place the rack of spare ribs. Add the ingredients for the brine and cover with water. Cover the container and place in the refrigerator for a few hours or overnight.
2. Preheat the oven to 325 degrees.
3. In a baking pan place the ribs and add about an inch one inch of the brine water. Place in the oven and bake for about 2 – 2 ½ hours, do not replace the brine it should evaporate while the ribs bake.

Chinese Style Crispy Pork Belly

INGREDIENTS:

2.5 kg pork belly
1 Tbsp Shaoxing wine, optional
to taste, rock salt

Seasoning:

6 – 7 teaspoons salt
4 teaspoons sugar
1 teaspoon five-spice powder
4 teaspoons freshly cracked black pepper

INSTRUCTIONS:

1. To prepare the seasonings: Combine salt with sugar, pepper and five-spice powder well. Set aside.
2. Use a knife to scrape away any impurities and hair. Rinse thoroughly.
3. Blanch in boiling water for about 20 minutes, until around 70% done, and the skin is softened. I used a large wok and filled 1/4 of it with water. I carefully placed the pork belly in, and to make sure that the meat is fully submerged in water, I just added a glass or two as needed and allowed it to boil. 
4. Drain well and wipe dry with paper towels.
5. Place the belly on a large platter or tray, meat side up and skin side down
6. Use a knife to make a few small slits on the meat and up the sides but not on the skin, so the seasoning will be absorbed better.
7. Evenly brush the meat with the rice wine (optional). Let it rest for around 20 – 30 minutes.
8. Coat the meat BUT NOT THE SKIN with seasoning mixture, otherwise, the five-spice will darken the skin.
9. Flip the meat so the skin is now facing upwards.
10. Using thick kitchen towels, evenly pat the skin dry. This is important so the skin can properly crisp up.
11. Using a small knife with a sharp tip OR fondue forks, gently poke the skin to make little holes all over the skin. Christine recommends not exerting too much force that the holes have gone through deep into the fat. But still, you can go crazy poking holes all over. During this time, preheat the oven to 200 C/395 F if you intend to cook it immediately.
12. Pat dry the skin a second time, making sure that there is no visible moisture left behind. Alternatively, you can also wrap the meat, but not the skin, with foil and leave it to dry inside the refrigerator overnight. I didn’t do this but the skin was still really crispy and the meat flavorful. Leaving it overnight however, most probably intensifies the flavor.
13. When ready to cook, place the belly in a large roasting rack lined with aluminum foil to catch the drippings. Pour around ¼ cup water onto the foil so when the drippings will fall, it will not burn.
14. Evenly season the rind with rock salt.
15. Bake in the preheated oven for about one hour to one hour and ten minutes.
16. Turn the heat dial to ‘broil’ and roast for another 20 minutes, or until the rind has sufficiently and evenly crackled. 
17. At this point you may notice that some parts of the skin appear to have charred too much. DO NOT PANIC. You can easily remove the charred bits by scraping it with a knife.
18. When done, remove from oven, chop it into your desired serving sizes – cubes or strips and serve warm with rice, with soy sauce and vinegar on the side. Enjoy!

INGREDIENTS:

2 lbs baby carrots
½ cup butter
¼ cup honey
¼ cup brandy
salt and pepper to taste
fresh parsley, chopped for garnish

INSTRUCTIONS:

1. In a large skillet, bring ½ inch of water to a boil. Add carrots, cover and cook until carrots are crisp-tender. Drain and set aside.
2. In the same skillet, cook butter and honey over medium heat until butter is melted. Stir in the brandy and bring to a boil. Cook until the liquid is reduced to about ½ cup.
3. Add the carrots, parsley and season with salt and pepper. Heath through and serve.

Chinese Green Beans with Ground Turkey over Rice

INGREDIENTS:

1 cup medium grain rice uncooked
1 tablespoon sesame oil
1 small bunch green onions sliced thin
2 cloves garlic minced or crushed
1 pound ground turkey
2 tablespoons chili garlic sauce
2 tablespoons hoisin sauce
1 teaspoon crushed ginger
1 pound washed and trimmed green beans or Chinese long beans if available
1 tablespoon soy sauce
1 tablespoon seasoned rice vinegar

INSTRUCTIONS:

1. Start rice cooking in lightly salted water.
2. When rice is about 15 minutes from done, heat large skillet over high heat. Add sesame oil, and sauté green onions and garlic for about 2 minutes. Stir in ground turkey and sauté 3-5 minutes, until meat is mostly cooked. Crumble meat as much as possible.
3. Stir in chili garlic sauce, hoisin sauce, and ginger. Add green beans and soy sauce, and stir to coat. Continue cooking over high heat for 7-9 minutes longer, stirring frequently, until beans are slightly tender.
4. Stir in rice vinegar, and cook one minute longer. Serve over cooked rice.

Blueberry Ice Cream

INGREDIENTS:

200g of condensed milk
400 ml of low fat milk
4 pasteurized egg yolks
150 ml of sugar
Seeds from 1 vanilla pod
1 tsp of vanilla extract
2 tbsp of golden syrup
250 g frozen or fresh blueberries

INSTRUCTIONS:

1. Add the berries into a pan and let them boil for a minute. Pour them in a miniblender and blend. Then take the puré and pour it in a sieve and take out as much juice as you can (it’s the juice you want).
2. Beat egg yolks and sugar together until it has a creamy consistency. Then add the condensed milk, extract, seeds and syrup – stir it all together.
3. Then add in the blueberry juice/sirup and the milk. Stir it all together well, use a whisk. Get it all in an ice cream machine and run the ice cream until it’s done. 30-60 minutes.
4. Then you have a delicious flavorful ice cream. Put the ice cream in a box and freeze down until use.

Chinese Cabbage Stir-Fry

INGREDIENTS:

2 tablespoons oil
6 oz. pork belly, pork loin, or chicken, thinly sliced
5 cloves garlic, smashed and cut in half
5 dried red chilies, deseeded and roughly chopped
1 1/2 lb. cabbage, hand-shredded into bite sized pieces, washed, and thoroughly dried
2 teaspoons Shaoxing wine
1 tablespoon soy sauce
1/2 teaspoon sugar
1 tablespoon water
1/2 teaspoon Chinese black vinegar
2 scallions, cut into 2-inch lengths

INSTRUCTIONS:

1. In a wok over high heat, add the oil. Sear the meat until caramelized. Add the garlic and chili, turn down the heat to medium, and stir-fry for a minute, taking care not to burn the garlic.
2. Add the cabbage, wine, soy sauce, sugar, and water. Turn up the heat to high, cover the lid and let the cabbage cook for 1-2 minutes. Uncover the lid, and stir in the dark vinegar, scallions, and salt to taste. The cabbage should be wilted, but still slightly crunchy and caramelized. Serve hot!
