Curried Carrot Coconut Soup

INGREDIENTS:

1 Tbsp olive oil
½ small onion, chopped
1 garlic clove, minced
2 tsp yellow curry paste*
¼ tsp cayenne (optional)
1 lb. carrots, peeled and chopped
2 cups vegetable broth, reduced sodium
1 can (15 oz.) lite coconut milk
¼ cup plain yogurt (Greek or regular)
cilantro, chopped for topping
croutons for topping (optional)
2 pieces naan bread (optional)

INSTRUCTIONS:

1. Heat olive oil in a large saucepan over medium-high heat. Add onion and garlic and cook 3-5 min. until onion is translucent. Add curry paste, cayenne and cook an additional minute. Add carrots and chicken broth and continue to cook until carrots are tender (approx. 10-12 min). Turn off heat and let soup cool slightly.
2. Puree soup in a blender, working in batches. Add back to saucepan and stir in coconut milk. Heat until hot.
3. Serve soup in bowls and top with a dollop of yogurt, chopped cilantro, and fresh pepper.
4. Top with croutons and serve with ½ piece warm naan bread (optional).

Notes:
*Yellow curry paste is available in well stocked grocery stores and in Asian markets.

Creamy White Bean Stew With Smokey Bacon

INGREDIENTS:

12 ounces apple smoked bacon, chopped into small pieces
1 tablespoon olive oil
1 tablespoon butter
1 onion, small dice
2 carrots, small dice
2 celery stalks, small dice
4 cloves garlic, pressed through garlic press
2 teaspoon Italian seasoning
Pinch or two sea salt
½ teaspoon cracked black pepper
6 (15 ounce) cans small white beans (or navy beans), drained and rinsed
4 cups chicken stock, hot
2 tablespoons flat-leaf parsley, chopped
1 teaspoon lemon zest
2 tablespoons lemon juice

INSTRUCTIONS:

1. Place a large Dutch oven, or heavy bottom pot, over medium-high heat; once the pot is hot, add in a small drizzle of olive oil, and the chopped bacon; crisp the bacon completely until nice and brown, then remove with a slotted spoon, drain it on some paper towel, and set it aside for a moment; reserve about 1 tablespoon of the bacon fat, and set that aside for a moment, as well; wipe out the pot, and return it to medium-high heat.
2. Next, add back into the pot the bacon fat, along with the olive oil and the butter, and allow them to melt together; once melted and hot, add in the diced onion, carrots and celery, and allow them to soften and saute for about 5 minutes; next, add in the garlic, and once it becomes aromatic, add in about 2/3 of the reserved, crisped bacon, as well as the Italian seasoning, the sea salt and the pepper, along with the white beans, and stir to combine; next, add in the hot chicken stock, stir, and allow the stew to gently simmer for about 40-45 minutes, partially covered with lid; about half way through the cooking process, mash the beans a little bit with the  back of your spoon, or with a potato masher, to break up the beans a little bit and release their natural starch to thicken the stew; after about 40 minutes, turn the heat off and finish the stew by adding in the chopped parsley, the lemon zest and the lemon juice; serve the stew with some nice, crusty bread to dip, and garnish with some of the remaining crisped bacon.

Creamy Chicken, Mushroom, and Green Chilli Soup

INGREDIENTS:

For the stock:

1 large roasted chicken carcass with some of the meat still on*
1 brown onion, chopped in half (no need to peel)
2 medium carrots, chopped in half (no need to peel)
½ tsp salt
½ tsp black pepper
Water to cover

For the soup:

2 tbsp. butter
1 brown onion, peeled and chopped
6 chestnut mushrooms, sliced (Crimini or Portabello work just as well too)
1 green chilli, sliced (or two if you like it hotter)
2 cloves garlic, peeled and minced
2 tbsp. plain flour**see notes below for gluten free
800ml/3.5 cups of your prepared chicken stock
3 tbsp. double/heavy cream
1 tsp lemon juice

To Serve:

Chopped spring onions (scallions) and chopped green chilli

INSTRUCTIONS:

1. Take your roast chicken carcass and strip off any little bits of meat you can find. You may have to pull it to pieces to get the most meat from it. Wrap up the bits of meat and refrigerate for adding later. Put all the leftover bits of chicken in a large pan. Add the onion, carrots, salt and pepper and cover with water (at least 1.5litres). Bring it to the boil and let it simmer for 2-3 hours - until the stock looks a creamy brown colour and has reduced by at least a third. Turn off the heat and leave to cool slightly, then put a sieve over a large bowl, and empty everything into the sieve. Throw the sieve contents away. You should be left with approx. 800ml/3.5 cups of stock (if not, just top up with a bit of water).
2. Heat half the butter in a large sauce pan. Add the onions and cook for 5-6 minutes, until they're soft and translucent. Add in the mushrooms and cook until they start to go golden brown. Add in the green chilli and garlic, cook for 1 minutes then add the rest of the butter. When the butter has melted, stir in the flour using a whisk and cook for 1 minute, stirring all the time. With the heat on medium-high, start to ladle in the chicken stock, stirring with the whisk all the time. When all the stock has been added, keep stirring until the soup thickens and bubbles gently. Turn the heat down to medium-low and add in the reserved chicken and cream. Stir, then add in the lemon juice. Have a taste to see if if needs a little more lemon juice or salt and pepper.
3. Divide between three bowls and top with a few chopped spring onions and green chilli slices.

Notes:

*If you find you don't have much chicken left on the carcass, simply add a raw chicken breast into the simmering stock about 45 minutes before the end of cooking. Then remove and shred the chicken when you strain the stock.
**For gluten free, omit the flour, and add the stock to the onions and mushroom mixture all at once. When the soup is bubbling, whisk in 1 heaped tbsp. of cornflour that has been mixed with 3 tbsp. cold water.
You can cool this soup, then cover and refrigerate it for up to two days. Reheat until piping hot.
To freeze, cool and cover the soup, then refrigerate for up to 1 month. Defrost thoroughly and then reheat until piping hot.

Creamy Cauliflower Mushroom Soup

INGREDIENTS:

2 tbsp. olive oil, divided
2 garlic cloves, minced
1 large leek, chopped, white and green parts separated
1 cup dry white wine
5 cups cauliflower florets (about 1 lb.)
4 cups vegetable broth
2 cups unflavored soy or almond milk
½ tsp. black pepper
¼ tsp. salt (or to taste)
1 lb. white button mushrooms, wiped clean, stems removed, and sliced

INSTRUCTIONS:

1. Coat the bottom of a large saucepan or Dutch oven with 1 tablespoon of olive oil. Place over medium heat. Add white parts of leeks and garlic. Sautée until leeks are softened, about 5 minutes.
2. Add wine and raise heat to medium-high. Bring to a simmer, Allow to simmer, stirring occasionally, until reduced by half, about 5 minutes.
3. Add broth and cauliflower. Bring back to a simmer and allow to cook until cauliflower is tender, about 10 minutes.
4. While cauliflower simmers, coat a large skillet with remaining 1 tablespoon of olive oil and place over medium heat. Add mushrooms in as even a layer as you can get them and cook for 5, minutes, until lightly browned on bottoms. Gently flip and cook another 5 minutes on opposite sides. Remove from heat and transfer to a plate.
5. Working in batches if needed, transfer cauliflower mixture to blender or food processor and blend until completely smooth. This may take a few minutes. Return to pot.
6. Add milk, salt and pepper to cauliflower mixture. Place over medium-high heat and cook just until heated throughout. Stir in mushrooms and green parts of leeks.

1. Sauté garlic in oil until fragrant.
2. Add the slices of banana.
3. Once sautéed, add water until it boils and bananas are a bit mushy.
4. Adjust seasoning with salt and pepper.

Chunky Cream of Tomato Soup

Chunky Cream of Tomato Soup

INGREDIENTS:

2 tbsp. butter
1/4 cup chopped onions 3 tbsp minced garlic
2/3 cup finely chopped tomatoes 1/4 tsp dried oregano
1 tbsp flour
3/4 cup tomato sauce
2 cups chicken stock/water
1 pack of ALASKA CRÉMA
1/2 cup coarsely chopped tomatoes 1 tbsp parmesan cheese
salt and pepper

INSTRUCTIONS:

1. Sauté onions, garlic, tomatoes, oregano and flour in butter until onions become translucent.
2. Add in tomato sauce and stock. Bring to a boil and simmer over low heat for 3 minutes.
3. Add in Alaska Créma and remaining tomatoes. Simmer over low heat for another 5 minutes.
4. Add in cheese and season with salt and pepper.

INGREDIENTS:

250g chicken thigh fillet, cut into bite-size pieces
1-8g sachet MAGGI MAGIC SARAP
1 ½ tsp ground cumin
2 tsp vegetable oil
1 pc medium onion, minced
2 cloves garlic, minced
5 cups water
1 cup red lentils, soaked in water overnight, rinsed and drained
1-22g sachet MAGGI MAGIC SINIGANG Original
1 pc medium carrot, small diced
2 pcs medium potatoes, small diced
Servings: 4-6

INSTRUCTIONS:

1. Season chicken with half sachet of MAGGI MAGIC SARAP and cumin.
2. Preheat a pan and add oil. Sear chicken and set aside.
3. In the same pan, sauté onions and garlic for 2 minutes. Add water and bring to simmer.
4. Add MAGGI MAGIC SARAP SINIGANG Original.
5. Add lentils and bring to simmer. Cook until lentils are tender.
6. Add carrot, potato and seared chicken. Simmer for 10 minutes.
7. Season with remaining half sachet of MAGGI MAGIC SARAP.
8. Transfer into serving bowls and serve hot.

Wonton and Bok Choy Soup

Wonton and Bok Choy Soup

INGREDIENTS:

5 cups chicken stock
1 large leek cut to strips
1 large stalk of celery cut to strips
1 medium carrot cut to strips
1 small red bell pepper cut to strips
3 pcs whole bok choy cut in half
salt and pepper to taste

Wonton:
150g fresh ground pork
100g minced prawns
1 large egg beaten
1 tbsp chopped spring onions
1 tbsp oyster sauce
1 tbsp soy sauce
½ tsp dried chili flakes
salt and pepper to taste
AJI-NO-MOTO Umami Super Seasoning

INSTRUCTIONS:

1. Combine all the ingredients, including AJI-NO-MOTO Umami Super Seasoning, for the wonton then place spoonfuls of the mixture on to the wonton wrappers and close them forming balls then steam them for 3-4 minutes until they’re done.
2. Place the vegetables in the boiling stock and cook for a minute then serve in individual bowls topped with chopped spring onions.
