Cheesy Chile Leftover Mashed Potato Patties

INGREDIENTS:

3 cups chilled leftover low-fat mashed potatoes
2 large egg whites
1 can (3 oz.) diced green chiles
¼ cup grated Parmesan cheese
3 tbsp minced cilantro, plus more for garnish
½ cup panko breadcrumbs
½ tsp ground pepper

INSTRUCTIONS:

1. Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
2. In a large bowl, mix together the mashed potatoes, 1 egg white, green chiles, Parmesan cheese and cilantro.
3. In a small bowl, whisk the remaining egg white. In a separate bowl, mix the breadcrumbs and pepper.
4. Using rounded ? cup portions, form the mashed potato mixture into patties. Place the patties on a cutting board.
5. Dip each patty into the whisked eggs white, then the seasoned breadcrumbs and place on a flat surface, such as a cutting board.
6. Place the prepared baking sheet in the oven and heat for 5 minutes.
7. Carefully remove the baking sheet from the oven and quickly place the patties on the sheet.
8. Return to the oven and cook until the patties are golden brown, about 15 minutes per side.
9. Garnish with cilantro (if desired) and serve.
