Citrus Scented Cream Dory Recipe

Ingredients:
1 kg cream dory, cut into 150g each
1 cup orangejuice
1 cup marble potatoes
¼ cup dayap
¼ cup lemon
¼ cup chickenstock
¼ cup alfalfa sprouts
¼ cup slurry
¼ cup olive oil
1 cup pearl
1 tbsp mix orange zest, lemon zest
1 tbsp butter
1 tsp salt
1 tsp whitepepper
onions/shallots
salt and pepper to taste
Instructions:
1. In a pot simmer all juices and the stock, poach the fish until done.
2. Remove fish and set aside.
3. Thicken the poaching liquid with slurry, and season with salt and pepper.
4. Place the fish on the plate, spoon over the top with tri-citrus sauce.
5. Garnish with alfa sprouts and roasted marble potato, pearl onion
