Beef Caldereta sa Gata

INGREDIENTS:

1 kg beef camto (flank steak), cut into 1inch cubes
2 cups pineapple juice
1 cup water
1 pc medium onion, quartered
1 tsp black peppercorn
2 - 8g sachets MAGGI MAGIC SARAP
1 pc medium potato, peeled and cut into 1inch cubes
1 pc medium carrot, cut into 1inch cubes
1/2 cup vegetable oil, for frying
1 cup tomato sauce
1 small can liver spread
1 Tbsp pickle relish
2/3 cup coconut milk
3 pcs siling labuyo (optional), minced
1 Tbsp sugar

Servings: 7-9

INSTRUCTIONS:

1. Place beef, pineapple juice and water into a pot. Bring to a boil, skim the scum, add onion and peppercorn. Season with MAGGI MAGIC SARAP. Simmer for about 1 ½ hours or until tender. Add water if liquid starts to dry up. Skim the scum as needed.
2. Meanwhile, fry potato and carrot in oil until golden brown, strain and set aside.
3. Pour tomato sauce in the pot. Add liver spread, pickle relish, fried potato and carrot.
4. Pour coconut milk and add siling labuyo and sugar.
5. Simmer until the sauce has thickened. Check seasoning.
6. Serve hot.
