Binagoongang Lechon Kawali sa Gata

INGREDIENTS:
1 kg pork belly
1 head garlic, crushed
1 pc bay leaf
1 tsp black peppercorn
2 liters water
4 - 8g sachets MAGGI MAGIC SARAP
1 liter vegetable oil, for frying
Bagoong:
2 Tbsp vegetable oil
2 pcs medium onion, small diced
1 head garlic, minced
4 pcs medium tomato, small diced
2 stalks leek, sliced
1/2 cup bagoong alamang
4 Tbsp vinegar
2 pcs red chili (siling labuyo), sliced
2 pcs bay leaves
1 cup water
1 tsp MAGGI MAGIC SARAP
1 cup coconut cream
Servings: 7-9
INSTRUCTIONS:
1. Combine pork, garlic, bay leaf peppercorn and water. Season with MAGGI MAGIC SARAP. Bring to a boil, skim the scum and simmer until pork is tender, approximately 45 minutes. Strain and cool down to room temperature. Cut into serving pieces.
2. Preheat oil and deep-fry the pork until golden brown. Strain and place in a rack or paper towel to drain excess oil.
3. Sauté garlic and onion, in pan for 2minutes. Add tomato and leek and cook for 2 minutes.
4. Add bagoong and cook for another 2 minutes. Pour vinegar and bring to simmer. Add chili, bay leaf and water. Bring to simmer. Season with MAGGI MAGIC SARAP. Pour coconut cream and simmer for 10 minutes. Check seasoning.
5. Add Lechon Kawali, stir and serve immediately.
