Chicken Lemongrass Stew

INGREDIENTS:

2 Tbsp vegetable oil
2 cloves garlic, minced
1 pc small onion, small diced
500g chicken, cut into serving portions
2 - 8g sachets MAGGI MAGIC SARAP
2 cups water
2 stalks lemongrass (tanglad), pounded and tied
2 pcs medium potato, peeled and cut into wedges
1 pc large red bell pepper, cut into thin strips
1/2 cup evaporated milk

Servings: 2-3

INSTRUCTIONS:

1. Season chicken with 1 - 8g sachet of MAGGI MAGIC SARAP and set aside.
2. Sauté the garlic and onion in oil and add the chicken and cook 2 minutes per side.
3. Pour in the water and bring it to boil, skim and scum and simmer.
4. Add the lemongrass and potato wedges and simmer for 10-15 minutes or until potatoes are tender.
5. Add the bell pepper and evaporated milk. Let it simmer for 5 minutes and serve.
