Cucumber With Red Onion Salad

INGREDIENTS:

1 big cucumber, thinly sliced
2 Red onions, thinly sliced in half rounds
1 cup plain yogurt
1/2 cup chives, finely chopped
Salt and Pepper

INSTRUCTIONS:

1. Mix cucumber and Red onions in a bowl.
2. Add fresh chives.
3. Pour the yogurt into the bowl.
4. Mix everything together and refrigerate for an hour.
5. Add salt and pepper to taste.
6. Serve chilled.

Quesadilla Mexicana Recipe

Quesadilla Mexicana Recipe

Ingredients:

Large flour tortillas
Grated cheddar cheese
olive oil or grape seed oil
sliced mushrooms
green onions
black olives, sliced
fresh tomatoes, diced
chicken pieces
avocado
lettuce
apple cider vinegar
salt

Instructions:

1. Heat large cast iron frying pan to medium high heat.
2.Add oil and spread around bottom of pan with spatula. Take one tortilla and place it in pan. Flip over the tortilla a few times.
3.When pockets of air begin to form in tortilla, take handful of grated cheese, sprinkle over top of tortilla. Add whatever additional ingredients you choose. Take care not to layer on the ingredients too thickly.
4.Reduce heat to low and cover pan. If quesadilla begins to smoke too much, remove from heat. After a minute, check to see if cheese is melted. If not, return cover and keep checking every minute until cheese is melted.
5.When cheese is sufficiently melted, use spatula to lift up one side of quesadilla and flip over other side. Tortilla should by now be browned slightly. If not, turn heat up to high and flip quesadilla over every 10 seconds or so until it gets browned. Remove from pan and cut into wedges.

Note: To make lettuce to accompany quesadilla, thinly slice iceberg lettuce. Sprinkle some cider vinegar on it and some salt.

Kimchi Recipe

Kimchi Recipe

Ingredients:

1 (2-pound) head napa cabbage
¼ cup salt
¼ cup Water
200g Korean radish or daikon, peeled and cut into matchsticks
1 tsp grated ginger
1 tsp sugar
2-3 tbsp water
1 tbsp grated garlic
3 tbsp Korean red pepper flakes (gochugaru)
4 spring onions, trimmed and cut into 1-inch pieces

Instructions:

1. Cut the cabbage lengthwise into quarters and remove the cores. Cut each quarter crosswise into 2-inch-wide strips.
2. Salt the cabbage. Place the cabbage and salt in a large bowl. Using your hands massage the salt into the cabbage until it starts to soften a bit, then add water to cover the cabbage. Put a plate on top and weigh it down with something heavy,. Let stand for 1-2 hours.
3. Rinse and drain the cabbage. Rinse the cabbage under cold water 3 times and drain in a colander for 15-20 minutes. Rinse and dry the bowl you used for salting, and set it aside to use in step 5.
4. Make the paste. Combine the garlic, ginger, sugar, and 3 tablespoons water in a small bowl and mix to form a smooth paste. Mix in the gochugaru,
5. Combine the vegetables and paste. Gently squeeze any remaining water from the cabbage and return it to the bowl along with the radish, scallions, and seasoning paste.
6. Mix thoroughly. Using your hands, gently work the paste into the vegetables until they are thoroughly coated.
7. Pack the kimchi into the jar. Pack the kimchi into the jar, pressing down on it until the brine rises to cover the vegetables. Leave at least 1-inch of headspace. Seal the jar with the lid.
8. Let it ferment. Let the jar stand at room temperature for 4-5 days. Serve.

Creamy Potato Chicken Salad Recipe

Ingredients:

500 g. Potato cooked cut into cubes
300 g. chicken breast, boiled cut into cubes
1 pc. Carrots cooked cut into cube
3 pcs. Red beets cooked cut into cube
30 g. Fresh basil leaves
½ cup Sour cream
½ cup Mayonnaise
2 pcs. Cucumber
1 tbsp. Salt
1 tsp. Crushed black peppercorn

Instructions:

1 Combine all ingredients in mixing bowl except the cucumber.
2 Cut cucumber into thin log slices using Mandouline.
3 Bed salad bowl with sliced cucumber and fill with mixture of creamy potato chicken salad.

Creamy Christ-mac Salad Recipe

Ingredients:

300 grms. elbow or salad macaroni, cooked al dente
1 medium carrot, diced
2 cups cooked, flaked chicken meat
½ cup raisins
½ cup chopped celery
1 cup diced Cheddar cheese
Dressing:
1 pack NESTLE ALL PURPOSE CREAM
1 cup mayonnaise
2 tbsp. sugar
Salt to taste

Instructions:

1. For dressing combine NESTLE ALL PURPOSE CREAM, mayonnaise and sugar. Add salt to taste.
2. Toss together all ingredients with prepared dressing. Chill for at least an hour before serving.

Classic Caesar's Salad Recipe

Classic Caesar's Salad Recipe

Ingredients:

100g Romaine lettuce
20g Crispy bacon chopped
10g Parmesan cheese
5g Croutons
5g Garlic mashed
½ tsp mustard
1 tsp Vinegar or Lemon juice
½ cup Olive oil
1pc Egg yolk

Instructions:

1. Drain properly the romaine lettuce, and set aside.
2. Mix into bowl egg yolk, mashed peeled garlic, mustard. Pour slowly with olive oil until creamy. Add vinegar, at the last.
3. Tossed lettuce with Caesar’s Salad sauce then place it on salad bowl, over the top with bacon, parmesan cheese, and croutons.
